One Dish Chicken, Potato, Veggie Bake
This recipe is on my regular menu for the month. The whole family loves it and there is never leftovers because it is eaten up quickly! We are scraping the bottom, sometimes, to eat every bite. It is delicious, simple, and healthy.
Recipe:
One Dish Chicken, Potato, Veggie Bake
Ingredients:
5-6 Medium sized potatoes
4-5 chicken breasts, butterflied
Mixed veggies (Pictured is frozen green beans, broccoli, cauliflower, and carrots)
1 stick butter (Melted)
Salt
Pepper
Garlic Powder
Minced Dried Onions
Oregano
Thyme
Directions:
1. Butterfly the chicken breast and lay them, somewhat overlapping, in the center of a 9x13 dish.
2. Quarter and slice the potatoes and place on one side of the chicken
3. Place veggies on the other side of the chicken.
4. Pour melted butter over the top of the whole pan
5. Sprinkle with seasonings to taste.
6. Cover with aluminum foil.
7. Bake at 425 degrees for 45 minutes (Or until chicken is cooked through)
